Combine all ingredients in a cocktail shaker with ice and shake well. Strain over fresh ice in a rocks glass and garnish with a lime wheel and sprig of fresh mint.
Combine ½ cup chopped fresh ginger in a small pot with 1 cup water and simmer for 5 minutes. Add 1 cup sugar, stir well until incorporated and remove from heat. Let ginger steep until syrup is cooled significantly. Strain and bottle syrup. Keep refrigerated.
