Signal Hill Founders Select Overproof Whisky Butter Tarts

¼ cup of Signal Hill OP

1 box of Pillsbury Pie Crust

1 ½ cups Brown Sugar

½ cup of Soften Butter

1 teaspoon Vanilla Extract

2 Eggs

Heat oven to 350°F. Spray 18 regular-size muffin cups with cooking spray. On a work surface, unroll pie crusts. Cut 9 rounds from each crust using a glass, rerolling dough as necessary. Gently press dough round into the muffin cup.

In a medium bowl, beat remaining ingredients with a spoon until well blended. Spoon about 2 tablespoons of brown sugar mixture into each tart.

Bake for 20 to 25 minutes or until filling is set and crust is golden brown. Let rest in the pan until cooled, about 30 minutes. Serve warm or cooled. Store covered in refrigerator.
